Birthdays and Cookie Cake Stacks

This week has been a long one. From hard track workouts to next to no sleep to loads of makeup work. But the one thing I always have to look forward to, after track, are making more sweets and eating the leftovers! Courtesy of one of my best friends who lives down the street- Mag- and my twin brother, sweets generally disappear fast enough for me to make more that night! It’s a fabulous setup, really. But yesterday was a special day: Mag’s birthday!

At first I thought, birthday = cake. But after a while of thinking about it… Mag loves sugar cookies! So why not a stacked old-fashioned sugar cookie cake? 5 layers each!

I was one of those kids that was never allowed to get Jewel birthday cakes with my name scrolled across the top. No pre-made Oreo pie crusts. Store bought cans of frosting with sprinkles on top were out of the question. My mom refused to buy these because she baked and she said they didn’t taste as good. I’m sure I was a fairly difficult child, because I remember always wanting those darned cans of frosting. Using elementary logic, I’d pull out my best pouty face.
It must have needed work because I always left with a sore lip and empty hands After a while, I turned my energy to actually trying to make things in the kitchen. By eight I'd fallen into my first love affair. Going through a school day became about getting back home to make key lime pies, frosting, cookies, and cakes. There was something about seeing a mixing bowl of ingredients blossom into something completely different, and wonderful, beneath my hands. That’s when my passion for baking was lit. With every new discovery about baking, I find something new about myself and the light grows brighter.
